In a bid to be in direct control of the entire process, we started our Coffee Roastery in 2018. Our passionate, dedicated and knowledgeable team directly engaged farmers to better understand the coffee we buy. We then carefully hand roast the coffee to highlight the natural characteristics of the coffee and thereafter brew coffee with scientific precision to ensure every cup of coffee we serve is excellent Our coffees are sourced from estates or co-operatives across Kenya. JOB SUMMARY

The  role encompasses a deep understanding of baking techniques, fermentation processes, and the artistry behind creating high-quality breads.

RESPONSIBILITIES

Bread Production: Assist in the production of artisanal breads and sourdough from start to finish, including mixing, shaping, proofing, and baking. Ensure that each loaf meets the highest standards of quality and consistency.Sourdough Management: Oversee the sourdough starter, feeding schedules, and fermentation processes. Monitor the health and vitality of the sourdough culture to maintain optimal flavor and texture in the final products.Recipe Development: Collaborate with the head baker to develop and refine recipes for a variety of artisanal breads and sourdough products. Experiment with different flour blends, hydration levels, and fermentation techniques to achieve desired flavor profiles and textures.Quality Control: Conduct regular quality checks throughout the baking process to maintain consistency and uphold the bakery's standards of excellence. Evaluate the appearance, texture, crumb structure, and flavor of each loaf to ensure customer satisfaction.Training and Mentorship: Train and mentor junior bakers and assistants in the art of artisanal bread baking and sourdough fermentation. Share your knowledge of traditional techniques, ingredient selection, and dough handling to foster skill development and passion for the craft.Ingredient Sourcing and Management: Source high-quality ingredients, including specialty flours, grains, and natural leavening agents, to enhance the flavor and nutritional value of the breads. Manage inventory levels and coordinate with suppliers to ensure consistent availability of key ingredients.Sanitation and Food Safety: Maintain a clean and organized work environment in compliance with food safety and best practices. Implement proper sanitation procedures for equipment, work surfaces, and storage areas to prevent contamination and ensure product integrity.
