Summary


The Head Baker will be responsible for overseeing the production of a wide range of baked goods, ensuring the highest standards of quality, taste, and presentation are consistently met.

Responsibilities

Provides, directs, and oversees training for team members under the general guidance of Pastry Chef.
Lead and manage the bakery team, providing guidance, training, and support as needed.

Set clear goals and expectations for the team, and monitor performance to ensure objectives are met efficiently and effectively.

Foster a positive and collaborative work environment, promoting teamwork, creativity, and continuous improvement.

Oversee the daily production schedule, ensuring that all baked goods are prepared according to established recipes, quality standards, and production timelines.

Monitor inventory levels of ingredients and supplies, and place orders as needed to maintain optimal stock levels and minimize waste.

Coordinate with other departments to plan and execute bakery offerings for various outlets, including restaurants, cafes, and special events.

Collaborate with the Pastry Chef and culinary team to develop new bakery items, seasonal specials, and innovative desserts that reflect current culinary trends and guest preferences.

Conduct research and experimentation to continuously improve recipes, techniques, and product offerings, while maintaining cost-effective production methods.

Ensure that all baked goods meet the highest standards of quality, taste, and presentation, and conduct regular tastings and evaluations to maintain consistency.

Adhere to strict food safety and sanitation guidelines, including HACCP principles, to ensure compliance with regulatory requirements and maintain a safe working environment.

Qualifications

Diploma in Culinary Arts, Baking and Pastry, or a related field is preferred.
Proven experience as a Head Baker or similar role in a hotel environment.

Extensive knowledge of bread and pastry production techniques, including sourdough, laminated dough, and cake baking, as well as decorating and finishing skills.

Strong leadership and team management abilities, with a track record of inspiring and motivating staff to achieve outstanding results.

Excellent organizational and multitasking skills, with the ability to prioritize tasks and manage time effectively in a fast-paced environment.

Creativity and innovation in recipe development and menu planning, with a keen eye for detail and aesthetics.
Exceptional communication and interpersonal skills, with the ability to collaborate effectively with colleagues at all levels.
Commitment to upholding high standards of quality, hygiene, and safety in bakery operations.
