Job Overview

The Executive Sous Chef is a leadership position that oversees the culinary operations in our hotels. Reporting directly to the Cluster Executive Chef, this role requires strong leadership and management skills to ensure seamless kitchen operations.

Key Responsibilities:
  • Lead by example, consistently demonstrating exceptional guest service skills while supporting fellow team members.
  • In the absence of the Cluster Executive Chef, manage all kitchens with precision and attention to detail.
  • Collaborate with the Cluster Executive Chef to create innovative menus that delight our guests.
  • Prepare daily market lists to guarantee high-quality food ordering while maintaining budget-friendly costs.
  • Maintain open communication with Storekeepers to ensure optimal quality and par levels.
  • Closely work with the Catering department to coordinate function menus and meet with clients as required.
  • Conduct daily shift briefings with all Sous Chefs to align on goals and expectations.
  • Ensure all kitchen team members are aware of standards and expectations.
  • Liaise daily with Outlet Managers and Sous Chefs to maintain open lines of communication regarding guest feedback.
  • Balance operational, administrative, and team needs with ease.
  • Guarantee proper staffing and scheduling in accordance with productivity guidelines.
  • Adhere to kitchen policies, procedures, and service standards.
  • Comply with all safety and sanitation policies when handling food and beverages.
Requirements:
  • Proven leadership experience in the culinary field is essential.
  • Journeyman's papers or international equivalent are required.
  • Diploma certification in a culinary discipline is an asset.
  • A proven track record of cost control, including food, equipment, labor, and waste management, is necessary to meet hotel financial goals.
  • Proficiency in Microsoft Windows applications is required.
  • Strong interpersonal and problem-solving abilities are crucial.
  • Highly responsible and reliable individuals are sought after.
  • Ability to work well under pressure in a fast-paced environment.
  • Ability to work cohesively as part of a team.
  • Ability to focus attention on guest needs, remaining calm and courteous at all times.

This position requires physical stamina, including:

  • Constant standing and walking throughout shifts.
  • Frequent standing and walking throughout shifts.
  • Occasional lifting and carrying up to 30 pounds.
  • Occasional kneeling, pushing, pulling, lifting.
  • Occasional ascending or descending ladders, stairs, and ramps.
